The algorithm kept telling me to make tortilla pizza, so today, over lunch, I caved and made two from a bunch of leftovers we had from the week.

The proteins and veggies are entirely up to you. We were out of pepperoni, so I used some leftover taco meat and stir-fried veggies (peppers and onions), which worked incredibly well.

Ingredients

  • 1 soft flour tortilla
  • olive oil
  • garlic powder to taste
  • salt and ground black pepper to taste
  • Trader Joe’s Umami seasoning (optional)
  • dried oregano to taste
  • tomato sauce
  • shredded mozzarella cheese
  • some veggies
  • some protein

Directions

  1. Preheat oven to 425F
  2. Brush olive oil on the tortilla
  3. Sprinkle garlic powder, salt, pepper, and Umami seasoning on top
  4. Bake for 3 to 5 minutes in the preheated oven until golden
  5. Remove from oven and spread tomato sauce on top. Add proteins and veggies. Sprinkle cheese and oregano on top.
  6. Bake in the oven until the cheese has melted (about 5 minutes)
  7. Remove, slice, and enjoy!

Overall, it was good, even if my photo does not reflect the taste. I have historically made my pizza dough, but for a quick fix, this was much better than the pizza dough that comes in a tube.

Clean-up was easy because I prepared mine on pre-cut parchment paper, which I slid on top of my pizza stone in my oven.
